For this elegant sweet wine, we harvesting berries in November hat were infected by noble rot (Botrytis cinereal), dried and concentrated with a sugar content of arround 25 %. After careful pneumatically pressing of the grapes, this delicacy is fermented slowly in large wooden barrels.
